*A note on definitions: Though we often use the terms “vegan” and “plant-based” interchangeably, here’s how we define them more specifically:

plant-based (adj): a meal or diet consisting of foods that originate from plants - including vegetables, fruits, grains, legumes, and more. “Plant-based” is a spectrum, not necessarily all or nothing.

vegan (adj.): not using any animal products or by-products, primarily in food, but also in other parts of one’s life such as clothing, due to ethical or environmental concerns. A vegan (noun) is someone who follows this lifestyle.
